Tuna and Sweetcorn Rice
A simple, flavourful meal of rice topped with tinned tuna and sweetcorn in a mild sauce.

Method
The method is written for 4. For a different number, use the amounts in the table above.
- Weigh out 120g of cooked long grain rice and set aside. Drain 150g of sweetcorn and set aside. Drain 1 tin of tuna in brine and flake the tuna into small pieces. Chop 100g of tomatoes into small pieces. Measure out 50ml of semi-skimmed milk.
- Place the rice in a large pan with 400ml of water. Bring to the boil, then reduce the heat to low, cover, and simmer for 15 minutes. Fluff the rice with a fork and set aside.
- Heat 1 tbsp of vegetable oil in a large pan over medium heat. Add the flaked tuna and chopped tomatoes, and cook for 5 minutes, stirring occasionally, until the tomatoes have softened. Season with salt and black pepper to taste.
- Add the drained sweetcorn and 50ml of semi-skimmed milk to the pan. Stir well to combine, and cook for a further 2 minutes, until the mixture has thickened slightly. Taste and adjust the seasoning if needed.
- Add the cooked rice to the pan with the tuna mixture, and stir well to combine. Cook for a further 2 minutes, until the rice is heated through and the mixture is well combined.
- Spoon the tuna and sweetcorn rice onto plates and serve immediately. Garnish with fresh spring onions if desired.
Tips
- To make it cheaper, use canned tuna in water instead of brine, and swap the semi-skimmed milk for a plant-based alternative.
- To batch-cook and portion it for the week, cook a larger quantity of rice and tuna mixture, then portion it into individual containers. Store in the fridge for up to 48 hours or freeze for up to 3 months.
- To reheat it safely, place the portioned rice in a microwave-safe bowl, cover with a damp paper towel, and microwave on high for 2-3 minutes, or until steaming hot throughout. Stir well before serving.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
