Method
The method is written for 12. For a different number, use the amounts in the table above.
- Preheat the oven to 180C (160C fan, gas 4). Line a 12-hole muffin tin with paper cases. 10 minutes
- Peel and mash the bananas. Measure out 150g plain flour, 100g caster sugar, 100g unsalted butter, 2 eggs, 120ml semi-skimmed milk, and 50g milk chocolate. Chop the chocolate into small pieces. 5 minutes
- In a large bowl, mix the mashed bananas, sugar, and eggs until smooth. Add the flour and milk, mixing until just combined. Stir in the chopped chocolate. 5 minutes
- Pour the batter into the prepared muffin tin, filling each case about 2/3 full. 2 minutes
- Bake for 20-25 minutes, or until a skewer inserted into the centre comes out clean and the edges are golden. 20-25 minutes
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. 5 minutes
- Once cooled, store the muffins in an airtight container at room temperature for up to 2 days, or freeze for up to 1 month. 5 minutes
