Method

  1. Weigh 200g porridge oats into a large mixing bowl or 1-litre jar. Pour in 500ml semi-skimmed milk, stirring until all oats are submerged. The mixture will look thin but will thicken as it soaks.
  2. Peel and mash 1 banana with a fork until smooth, then stir it into the oat mixture. The banana adds natural sweetness and a creamy texture. Taste and add a pinch of salt if desired.
  3. Roughly chop 50g walnuts on a board using a sharp knife, aiming for pieces about 1cm big. Stir half of the nuts into the mixture now, reserving the rest for topping.
  4. For meal prep, spoon the mixture into 4 individual jars or containers before chilling, so they’re ready to grab and go. Otherwise, cover the bowl tightly with cling film or a lid.
  5. Place in the fridge for at least 4 hours, or ideally overnight. The oats will absorb the liquid and become soft and pudding-like.
  6. In the morning, give the oats a good stir – they should be thick and creamy with no dry oats visible. If too thick, loosen with a splash more milk. Taste and add honey or maple syrup if you like.
  7. Peel and slice the remaining banana into 0.5cm rounds. Divide the oats evenly among 4 serving bowls. Top each with banana slices and the reserved walnuts.
  8. Drizzle with 1 tsp honey per bowl if using, and sprinkle with a pinch of ground cinnamon. Serve immediately, or keep covered in the fridge for up to 2 days.
