Method
The method is written for 12. For a different number, use the amounts in the table above.
- Preheat the oven to 180C (160C fan, gas 4). Line a 20cm square tin with baking parchment. 10 minutes
- Weigh out 225g porridge oats and place them in a large bowl. Set aside. 2 minutes
- Weigh out 125g unsalted butter and place it in a saucepan. Melt over a low heat until smooth and bubbling. Remove from the heat and stir in 125g golden syrup and 50g caster sugar until fully combined. 5 minutes
- Pour the hot syrup mixture over the oats and stir well with a wooden spoon until the oats are fully coated. The mixture should be thick and sticky. 2 minutes
- Transfer the mixture to the prepared tin and press it down firmly with the back of a spoon to create an even layer. The top should be slightly domed. 2 minutes
- Bake in the preheated oven for 20-25 minutes, or until golden and crisp at the edges. The centre should still be soft. Allow to cool completely in the tin before cutting into squares. 25 minutes
- Once cooled, cut the flapjack into 12 squares using the baking parchment to help. Serve immediately or store in an airtight container for up to 3 days. 5 minutes
Tips
- To make it cheaper, swap the golden syrup for honey or maple syrup.
- Store the flapjacks in an airtight tin for up to 3 days at room temperature or freeze for up to 1 month.
- For a healthier version, reduce the sugar and syrup, and add 1 tsp of cinnamon and 1 tbsp of chopped nuts.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
