Method

  1. Preheat your oven to 180°C (160C fan, gas 4). Peel, core, and slice the 2 apples into 1cm chunks, then lightly grease a 20cm round baking tin or line a tray with grease-proof paper.
  2. In a large mixing bowl, sift the 300g plain flour with 50g caster sugar. Add the 100g cold, cubed unsalted butter and use your fingertips to rub it into the flour until the mixture resembles coarse breadcrumbs.
  3. Beat the 1 egg in a small bowl and pour it into the flour mixture. Mix quickly with a spoon until a soft dough forms, then turn out onto a floured surface and knead for one minute until smooth.
  4. Divide the dough into 6 equal balls and roll them out slightly on a floured surface to 2cm thick. Place them on the prepared baking tray, leaving space between each biscuit.
  5. Bake for 12-15 minutes until the biscuits are golden brown and a skewer inserted into the centre comes out clean.
  6. While the biscuits bake, pour the 250ml cream into a chilled bowl and whisk by hand or with an electric mixer until stiff peaks form. Do not over-whisk into butter.
  7. Place the sliced apples in a saucepan with a splash of water and cook over medium heat for 5-8 minutes until tender and the liquid has turned syrupy.
  8. To serve, split a warm biscuit in half and top with a generous spoonful of the cooked apples and a dollop of whipped cream. Top with the second half of the biscuit and serve immediately.
