Method
The method is written for 12. For a different number, use the amounts in the table above.
- Weigh 250g plain flour into a large bowl with a pinch of salt. Add 125g cold unsalted butter, cut into 1cm cubes. Using fingertips, rub butter into flour until the mixture resembles fine breadcrumbs with no large lumps remaining. Stir in 50g caster sugar.
- Beat 1 egg with 50ml semi-skimmed milk in a small jug. Make a well in the flour mixture, pour in the liquid, and mix with a round-bladed knife until a soft dough forms. If too dry, add 1-2 tbsp cold water. Shape into a disc, wrap in cling film, and chill for 20 minutes.
- Meanwhile, peel, core and slice 500g apples into 1cm thick slices. Place in a saucepan with remaining 50g caster sugar and 2 tbsp water. Cook over medium heat for 8-10 minutes, stirring occasionally, until apples soften but hold shape and liquid evaporates. Cool completely.
- Preheat oven to 200C (180C fan, gas 6). Line two large baking trays with baking parchment. On a lightly floured surface, roll chilled pastry to 3mm thickness. Using a 12cm round cutter, cut 12 circles, re-rolling trimmings once.
- Place a heaped tablespoon of cooled apple filling on half of each pastry circle, leaving a 1cm border. Brush edges with beaten egg (second egg mixed with 1 tbsp milk). Fold pastry over filling, press edges firmly to seal, then crimp with a fork.
- Transfer turnovers to prepared trays, spacing apart. Brush tops with remaining egg wash. Cut 2 small steam vents in each. Bake for 20-22 minutes until golden brown and pastry is crisp on the base. Cool on wire rack for 10 minutes.
- Serve warm or cold. Store in an airtight tin at room temperature for up to 2 days. For freezing, place cooled turnovers on a tray until solid, then bag; freeze for up to 3 months. Reheat from frozen at 180C fan for 15 minutes until piping hot.
Tips
- Swap caster sugar for granulated to save money; dissolve it in the apple pan with the water.
- Use cooking apples (Bramley) if cheaper; they break down more so cook for only 5 minutes.
- Freeze uncooked assembled turnovers on a tray, then bag; bake from frozen adding 5 minutes to cooking time.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
