Bubble and Squeak with Fried Eggs
A thrifty British favourite turning humble potatoes and mixed vegetables into a crisp golden cake, topped with runny fried eggs.

Method
The method is written for 4. For a different number, use the amounts in the table above.
- Peel the 1kg of potatoes and chop them into 2cm chunks. Place them in a large pot of salted water, bring to a boil, then simmer for 15-20 minutes until tender enough to easily pierce with a fork, then drain thoroughly.
- While the potatoes cook, finely dice the 2 onions. Heat 2 tbsp of oil in a large frying pan over medium heat and sauté the onions for about 8-10 minutes until they are soft and translucent throughout.
- Add the 500g of frozen mixed vegetables to the pan with the onions. Fry on medium-high heat for 5 minutes until the vegetables are fully defrosted and any excess moisture has evaporated.
- Add the cooked potatoes to the pan and stir in the 100g of grated cheddar cheese. Use a potato maser or lightly crush everything together until it is well combined, leaving some small rustic chunks of potato for texture.
- Press the mixture down firmly into an even layer using the back of a spatula. Turn the heat down to medium and fry undisturbed for 5-8 minutes until the bottom is deep golden brown and crispy.
- Carefully flip the bubble and squeak cake using a large plate or another spatula. Fry the other side for another 5 minutes until both sides are equally golden and crispy; season generously with salt and black pepper.
- Wipe the pan clean and add another splash of oil over medium-low heat. Crack the 4 eggs into the pan and fry for 3-4 minutes until the whites are set but the yolks remain runny and yellow.
- Serve out large portions of the bubble and squeak onto four plates, topping each with a fried egg. Season with an extra crack of black pepper and serve immediately while hot and crispy.
Tips
- To save money, use leftover roast potatoes from the night before instead of boiling fresh ones.
- Batch-cook by cooling the bubble and squeak quickly quickly into containers; store in the fridge for up to 2 days or freeze immediately.
- To reheat, place in a pan with a splash of water over medium heat until steaming hot throughout; only reheat leftovers once.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
