Method
The method is written for 4. For a different number, use the amounts in the table above.
- Peel and chop the potatoes into 2cm cubes. Peel and finely chop the onion. Peel and slice the carrots into 2mm rounds. Season the beef mince with salt and black pepper.
- Heat a large frying pan (28cm) on medium heat. Add 1 tbsp vegetable oil and swirl to coat. Add the beef mince and cook for 5-7 minutes, stirring occasionally, until browned and no pink remains.
- Add the chopped onion and carrots to the pan. Cook for 5 minutes, stirring occasionally, until the onion is translucent and the carrots are softened.
- Stir in the cubed potatoes and beef stock. Bring to a simmer, then reduce the heat to low and cover the pan. Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender and the liquid has reduced.
- Remove the lid and increase the heat to medium. Cook for a further 2-3 minutes to evaporate any remaining liquid. Season to taste with salt and black pepper.
- Transfer the beef and veggie skillet to a serving dish. Cover with foil and let it rest for 5 minutes before serving.
- Serve the beef and veggie skillet hot, with any remaining liquid spooned over the top. Enjoy!
Tips
- To make it cheaper, swap the beef mince for lamb mince or use a cheaper cut of beef. You can also use frozen peas or corn instead of carrots.
- To batch-cook, cook the skillet as directed, then divide into 4 portions. Store in the fridge for up to 2 days or freeze for up to 1 month. Reheat in the microwave until steaming hot throughout, then reheat only once.
- To reheat safely, place the portion in a microwave-safe dish and cover with a damp paper towel. Microwave on high for 2-3 minutes, stirring halfway, until steaming hot throughout. Do not reheat more than once.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
