Method
The method is written for 4. For a different number, use the amounts in the table above.
- Preheat the oven to 200°C (180°C fan)/400°F/Gas 6. Peel and chop the potatoes into even chunks, about 2cm (¾in) thick. Peel and finely chop the onion. Season the potatoes with salt and black pepper.
- Place the potatoes in a large saucepan, cover with cold water, and bring to a boil. Cook for about 10 minutes, until the potatoes are partially cooked but still firm. Drain the potatoes and return them to the saucepan.
- Add the butter and milk to the potatoes, and mash until smooth. Season with salt and black pepper to taste. Set aside.
- While the potatoes are cooking, heat a large frying pan over medium heat. Add the sausages and cook for about 10 minutes, turning occasionally, until browned all over and cooked through. Remove the sausages from the pan and set aside.
- In the same pan, add the chopped onion and cook for about 5 minutes, until softened and translucent. Sprinkle the flour over the onion and stir well to combine. Cook for 1 minute, stirring constantly.
- Pour in the stock and bring to a simmer. Cook for about 5 minutes, until the gravy has thickened. Season with salt and black pepper to taste. Taste and adjust the seasoning if needed.
- To serve, spoon the mashed potatoes onto plates, top with the sausages, and pour the gravy over the top. Serve immediately.
Tips
- To make this meal cheaper, use cheaper cuts of pork for the sausages and swap the semi-skimmed milk for a lower-fat alternative.

Storing leftovers
