Method

  1. Prep: Finely chop the onions and spring onions. Grate the ginger. Peel and dice the carrots into small cubes. Drain and rinse the frozen mixed vegetables. Use a sharp knife for chopping and a box grater for the ginger. Dice the carrots into pieces about 1cm in size.
  2. Heat 1 tbsp vegetable oil in a large pan (24-28cm) on medium heat. Add the chopped onions and cook until softened and translucent, about 5 minutes. Stir occasionally to prevent burning.
  3. Add the grated ginger to the pan and cook for another 1 minute, stirring constantly. This will release the ginger's aroma.
  4. Add the diced carrots to the pan and cook for 3-4 minutes, stirring occasionally. The carrots should start to soften but still have a slight crunch.
  5. Pour in the tin of chopped tomatoes and add 400ml of water. Stir well to combine. Bring to a boil, then reduce the heat to low and let it simmer for 10 minutes. Season with salt and black pepper to taste. Stir occasionally.
  6. Add the frozen mixed vegetables to the pan and cook for another 5 minutes, until heated through. Stir gently to combine.
  7. While the vegetables are cooking, cook the rice according to the packet instructions. Once cooked, drain and set aside. Rinse the rice under cold water before cooking to remove excess starch.
  8. Add the cooked rice to the pan with the vegetables. Stir gently to combine, ensuring the rice is evenly distributed. Add the butter to the pan and stir until melted.
  9. Cover the pan and let it cook on low heat for 5 minutes, allowing the flavours to meld together. Stir gently once more before serving.
  10. Serve the vegetable biryani hot, garnished with the chopped spring onions. Enjoy with a side of raita or plain yogurt if desired.
