Method
The method is written for 4. For a different number, use the amounts in the table above.
- Preheat your oven to 200°C (180°C fan) or Gas Mark 6.
- Slice the loaf of white bread into 4 equal pieces, about 2cm thick.
- Finely chop the red onion. Halve the cherry tomatoes.
- In a small pan over medium heat, add 1 tbsp of vegetable oil. Add the chopped onion and cook for 3-4 minutes until softened.
- Add the tin of chopped tomatoes to the pan, stir well, and bring to a simmer. Cook for 5 minutes, stirring occasionally.
- Season the tomato mixture with salt and black pepper to taste.
- Place the bread slices on a baking tray. Spread the tomato mixture evenly over each slice, leaving a small border for the crust.
- Top each pizza with the halved cherry tomatoes and sprinkle with the grated cheddar cheese.
- Bake in the preheated oven for 10-12 minutes, until the cheese is melted and bubbling, and the edges of the bread are golden.
- Remove from the oven and let it cool for 2-3 minutes before serving.
