Method

  1. Preheat the oven to 180C (160C fan, gas 4). Line a 12-hole muffin tin with paper cases. 5 minutes
  2. Weigh out the flour and butter. Rub the butter into the flour using your fingertips until the mixture resembles breadcrumbs. Make a well in the centre. 2 minutes
  3. Crack the eggs into a bowl and whisk them together with the milk. Pour the mixture into the well in the flour and butter. Stir until just combined. The batter should be thick and slightly lumpy. 2 minutes
  4. Spoon the batter into the paper cases, filling each one about two-thirds full. Bake in the oven for 15-20 minutes, or until golden at the edges and a skewer inserted into the centre comes out clean. 20 minutes
  5. Remove the fairy cakes from the oven and leave to cool in the tin for 5 minutes. Transfer them to a wire rack to cool completely. 5 minutes
  6. Once cooled, store the fairy cakes in an airtight container at room temperature for up to 2 days, or in the fridge for up to 2 days. To freeze, place the cooled fairy cakes in a freezer bag and freeze for up to 3 months. Defrost in the fridge overnight and eat within 24 hours. 5 minutes
  7. To serve, dust the fairy cakes with icing sugar and enjoy! 1 minute

Tips

Nothing wasted: your leftover ingredients

Supermarkets sell set pack sizes, so you'll have some ingredients left. Here's how to keep them, and other recipes here that use them up.

Storing leftovers

Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
