Method
The method is written for 12. For a different number, use the amounts in the table above.
- Preheat your oven to 180°C (160°C fan, gas 4) and lightly grease a 2kg loaf tin with a small knob of butter. Weigh out your 250g plain flour and 100g caster sugar so you have everything ready for the mixing.
- In a large mixing bowl, cream the 200g softened unsalted butter with 100g caster sugar until the mixture is pale and fluffy. Whisk in the 2 eggs one at a time, beating well after each addition to prevent the mixture from curdling.
- Gradually fold the 250g plain flour into the butter mixture alternating with the semi-skimmed milk. Mix with a wooden spoon or spatula until a soft, sticky dough forms and pulls from the sides of the bowl.
- Roll the dough out on a lightly floured surface into a rectangle about 1cm thick. Sprinkle a generous mixture of extra sugar and cinnamon evenly over the surface, pressing down lightly to ensure it sticks to the dough.
- Roll the dough up tightly from the long edge to form a log, pinching the seam shut to seal it. Place the log into the greased loaf tin, seam-side down, and smooth the top gently.
- Bake for 35 to 40 minutes until the crust is deep golden brown and springs back when pressed. A skewer inserted into the centre should come out clean with no wet dough remaining.
- Let the bread cool in the tin for 10 minutes before transferring it to a wire rack to cool completely. Slice into 12 even portions and serve warm with salted butter if desired.
Tips
- Store in an airtight tin or at a cool, dry place for up to 3 days to keep the loaf soft.
- To freeze, wrap cooled slices in cling film and a freezer bag for up to 3 months; defrost in the fridge overnight.
- For a cheaper version, use margarine instead of unsalted butter and whole milk instead of semi-skimmed.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
