Method
The method is written for 4. For a different number, use the amounts in the table above.
- Weigh 500 g pork sausages and 1 kg Maris Piper potatoes; rinse the potatoes, pat them dry, then cut into 1.5 cm thick wedges and place them in a bowl. Season the wedges with 1 tsp salt and ½ tsp black pepper, then toss to coat.
- Add 100 g plain flour and 50 g breadcrumbs to the bowl with the wedges; drizzle 1 tbsp vegetable oil over them and toss until each wedge is lightly coated. The coating should look dry but cling to the potato surface without clumps.
- Preheat the air fryer to 200 °C (390 °F) for 3 minutes; arrange the coated potato wedges in a single layer in the basket, ensuring they do not overlap. Cook for 12 minutes, shaking the basket halfway through to promote even browning.
- While the potatoes cook, prick each sausage with a fork to prevent bursting, then place the 500 g sausages in the air fryer basket alongside the wedges (or in a second batch if needed). Cook for 10‑12 minutes, turning once, until the sausages are golden brown and the juices run clear.
- Check the wedges after the total cooking time; they should be crisp on the outside and fluffy inside, with a golden‑coloured crust. If they need more colour, return them for an extra 2‑3 minutes.
- Remove the sausages and wedges from the air fryer; let them rest for 2 minutes before serving to retain juices. Transfer to a serving platter and sprinkle with a pinch of chopped fresh parsley if desired.
- Taste a wedge and a sausage slice; adjust seasoning with a little more salt or pepper if needed. Serve immediately while hot, accompanied by your favourite dip such as ketchup or mustard.
- For leftovers, cool the food within 1‑2 hours, then store in an airtight container in the fridge and eat within 48 hours. Reheat only once in the air fryer at 180 °C for 5‑7 minutes, until steaming hot throughout.
Tips
- Swap pork sausages for cheaper chicken or vegetarian sausages and use sweet potato wedges for a lower‑cost variation.
- Cook a double batch, portion into freezer‑safe bags and freeze as soon as cool; reheat portions directly from frozen, adding 2‑3 minutes to the cooking time.
- When reheating, ensure the food is steaming hot throughout and only reheat once to stay within food‑safe guidelines.
