Method
The method is written for 4. For a different number, use the amounts in the table above.
- Prep: Peel and chop the 1 onion into small, even dice (about 0.5cm). Peel and cut the 2 carrots into 2cm chunks. Set aside in a bowl.
- Heat a 24cm (9-inch) deep frying pan on medium heat. Add 1 tbsp vegetable oil and swirl to coat the base. Once hot, add the chopped onion and carrots.
- Increase the heat to medium-high. Pour in 1 tin chopped tomatoes (400g) and 1 tsp salt (adjust to taste later). Stir well, then simmer uncovered for 10 minutes, until the mixture thickens slightly.
- Reduce heat to low. Stir in 100ml cream and ½ tsp black pepper. Simmer gently for 5 minutes, until the cream has melted and the soup is smooth.
- Taste and adjust: Add ½ tsp salt if needed, or a pinch of sugar to balance acidity. Stir in 1 tbsp chopped spring onion (optional, for freshness).
- Remove from heat and let cool slightly (1 minute). Ladle into 4 bowls or 4 heatproof containers for serving. Keep warm on a low hob (if reheating later).
- For leftovers: Cool within 1–2 hours (place in a cold kitchen for 30 mins, then transfer to the fridge). Store in an airtight container for up to 2 days (eat within 48 hours).
Tips
- Cheaper swap: Use **1 tin chopped tomatoes** (400g) + **100g tinned chopped tomatoes** (smaller can) to cut costs. Blend the extra into a quick **tomato passata** for future use.
- Batch-cook tip: Double the recipe, cool, and freeze in **portioned containers** (100ml servings). Thaw overnight in the fridge before reheating. Reheat once only until steaming hot.
- Reheat safely: Microwave in **500ml portions** for **3–4 minutes**, stirring halfway. Alternatively, simmer in a saucepan on **low heat** until bubbling (no dry patches).
Nothing wasted: your leftover ingredients

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
