Method

  1. Weigh 200g halloumi and cut it into 1 cm cubes. Measure 250g long‑grain rice into a bowl. Peel and finely chop 150g onion, then peel and dice 100g carrot into small pieces. Open a 400g tin of chopped tomatoes and set aside.
  2. Heat 1 tbsp vegetable oil in a 20 cm non‑stick frying pan or saucepan over medium heat. Add the halloumi cubes and fry 3–4 minutes, turning occasionally, until all sides are golden brown. Use a slotted spoon to transfer the halloumi to a plate and keep warm.
  3. If the pan looks dry, add another ½ tbsp oil. Add the chopped onion and cook 4–5 minutes on medium heat, stirring occasionally, until it becomes soft and translucent. Stir in the diced carrot and cook 2–3 minutes more, until the carrot starts to soften but still has a bite.
  4. Add the measured rice to the pan and toast it for 1 minute, stirring constantly, until the grains look slightly glossy and are coated with the oil and vegetables. This step helps the rice stay separate during cooking.
  5. Pour in the 400g chopped tomatoes and add 300ml water (or vegetable stock for extra flavour). Stir once, then bring the mixture to a gentle boil over medium‑high heat. Reduce the heat to low, cover the pan with a lid and simmer 12–14 minutes, or until the rice is tender and all liquid has been absorbed.
  6. Season the rice with ½ tsp salt, ¼ tsp black pepper and, if you like more heat, ½ tsp smoked paprika or a pinch of chili flakes. Stir well, taste and adjust the seasoning if needed. Keep the pan on low heat while you finish the halloumi.
  7. When the rice is cooked, remove the lid and gently fold in the reserved halloumi cubes. Let the dish sit off the heat for 2 minutes so the halloumi warms through without melting. Check that the halloumi is heated throughout and the rice looks fluffy and separate.
  8. Serve the spicy tomato rice with halloumi immediately, divided into four bowls. Optionally garnish with a squeeze of lemon juice or a sprinkle of chopped fresh parsley for brightness. Enjoy while hot, and store any leftovers safely.
