Method
The method is written for 4. For a different number, use the amounts in the table above.
- Prepare the vegetables by finely dicing the onion, slicing the 250g carrots into thin rounds, and halving the 200g cherry tomatoes. Set everything aside to use.
- Fill a large pot with water and bring to a rolling boil over high heat. Add a generous pinch of salt, then drop in the 250g spaghetti, cooking according to the packet instructions for about 8-10 minutes until al dente.
- While the pasta cooks, heat 2 tbsp of oil in a large pan over medium heat. Add the diced onion and carrots, sautéing for 5-7 minutes until the onion is translucent and the carrots are tender-cris.
- Add the halved cherry tomatoes to the pan with the onions and carrots. Cook over medium-high heat for 4 minutes until the tomatoes begin to soften and release their juices.
- Stir the 250g of frozen peas into the vegetable pan. Cook for 2-3 minutes until the peas are a vibrant green and heated through through.
- Drain the spaghetti using a colander, reserving about 100ml of the starchy pasta water. Add the pasta directly into the pan with the vegetables and peas.
- Toss everything together thoroughly, adding a splash of the reserved pasta water to create a light sauce. Season generously with salt and cracked black pepper to taste.
- Taste a small portion to ensure it is well-seasoned. Serve immediately in warmed bowls while the pasta is steaming and the vegetables are evenly coated.
Tips
- To save money, use a bag of frozen Mediterranean mix instead of fresh carrots and onions to reduce prep time.
- To batch-cook, portion leftovers into airtight containers and store in the fridge for up to 2 days.
- When reheating, add a splash of water and microwave on high for 2 minutes until steaming hot throughout; only reheat once.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
