Eton Mess
A classic British dessert made with strawberries, cream, and meringue.

Method
The method is written for 4. For a different number, use the amounts in the table above.
- Hull the strawberries and slice them into quarters. You should have about 500g sliced strawberries. Place them in a large bowl.
- Pour the double cream into a separate bowl. Using an electric whisk, whip the cream until it forms soft peaks. This should take about 2-3 minutes. The cream should be thick and slightly fluffy.
- Gently fold the whipped cream into the sliced strawberries until they are well combined. Make sure the strawberries are evenly coated with cream.
- Separate the meringue nests into individual meringue nests. You should have about 4 nests. Place them on a serving plate.
- Spoon the strawberry and cream mixture onto the meringue nests, dividing it evenly among the 4 nests. You should have about 125g of the mixture per nest.
- Serve the Eton Mess immediately, while the meringue is still fresh. Enjoy your dessert!
Tips
- You can use frozen strawberries if fresh ones are not available. Just make sure to thaw them completely before using.
- To make it cheaper, you can use Greek yogurt instead of double cream. Whip it until it forms soft peaks, just like the cream.
- Store the Eton Mess in an airtight container in the fridge for up to 2 days. It's best enjoyed fresh, but it can be reheated in the microwave for a few seconds to make it more creamy.

Storing leftovers
Cool leftovers and put them in the fridge or freezer within 1–2 hours. Eat fridge leftovers within 2 days, or freeze them. Defrost in the fridge and reheat only once, until steaming hot all the way through (Food Standards Agency guidance).
