Method

  1. Prepare the veg by finely dicing the onion and slicing the two carrots into thin 5mm rounds. Weigh out 200g of long grain rice and drain the 400g tin of kidney beans under cold water until the water runs clear.
  2. Heat 1 tbsp of vegetable oil in a large saucepan or pot over medium heat. Add the diced onion and sliced carrots, frying them for 6-8 minutes until the onion is translucent and the carrots start to soften.
  3. Stir in your spices of the choice, cooking for 1 minute until fragrant. Pour in the 400g tin of chopped tomatoes and the drained kidney beans, stirring well to combine all ingredients.
  4. Add 150ml of water to the chilli and season with salt and pepper. Bring the mixture to a gentle boil, then reduce the heat to low and simmer with the lid partially on.
  5. Simmer the chilli uncovered for 20 minutes, stirring occasionally, until the sauce has thickened significantly and the carrots are tender when pierced with a fork.
  6. While the chilli simmers, place the 200g of rice in a separate pot with 400ml of water and a pinch of salt. Bring to a boil, then cover and cook on the lowest heat for 12 minutes until the water is absorbed.
  7. Taste the chilli and add more seasoning if needed. Serve the thick black bean chilli generously over bowls of the fluffy cooked rice while everything is steaming hot.
